FRANCESCO

SOUS CHEF

Francesco comes from Friuli Venezia Giulia, in the North-East of Italy. Francesco is an integral part of the kitchen team and his knowledge of regional cuisine is second to none. Every month Francesco produces a ‘Specials’ menu based on one of the many regions that make up Italy. For the month of November he has created dishes from Tuscany.

EXECUTIVE CHEF

Fabrizio has been with us since the beginning and he epitomises Paesan. Fabrizio comes from Anzio a small town just outside of Rome (Lazio) and he has a deep identity and unwavering passion for traditional Italian food. He has created seasonal menus for Paesan from the very beginning, where he uses his vast experience to create simple dishes that are full of flavour. 

GENNARO

CHEF DE PARTIE

Gennaro is one of the newer members of the kitchen team. Gennaro comes from Naples in Southern Italy. Since joining us Gennaro has brought a real spark to the kitchen. Gennaro has grown up using the Southern cooking traditions, using the freshest San Manzano tomatoes, fresh pasta and the tastiest vegetables in the world and we haven't even mentioned the lemons from Amalfi yet!!
